I don’t know about your house, but we have an occasional debate between whole or jelled cranberries for holiday dinners. I tend to go back and forth, myself. One thing that we enjoy every year is my Brandy Orange Cranberries. It’s super simple to make and I can make it well in advance. Just pop it in jar or container and stick it in the fridge. I’ll typically make it a couple weeks head of each holiday dinner.
The most challenging and time consuming part of the recipe is zesting the orange. Other than that, this recipe is quick to pull together and bake in the oven. I prefer to use fresh orange zest because is doesn’t have the coarse texture of the store bought dried orange zest. Either works just as well. So if zesting isn’t your cup of tea, stop by the spice section of your local grocery store and pick up a bottle of orange zest.
Once you have your orange zest ready to go, the recipe is just a matter of combining the ingredients and a baking dish. If you plan to bake this the evening of your holiday dinner, I suggest baking in a deep oven safe dish and transferring it to another dish for the table. As it bakes, it boils up and rises about 1/2 – 1 inch in the baking dish. In order to avoid making a complete mess of your oven, use a deep dish. It boiled over a bit on me the first time I made it. This dish was a mess and I knew that if I set in on my white table clothe…well…I’d be very sad indeed.
Combine the ingredients fully and place uncovered in the oven. Allow it to bake for about an hour, or until the berries have all popped. I like to bake it a little longer to allow the liquid to cook of a bit. Once the sauce cools, it does take on a jelly like consistency.
There you have it. A simple homemade recipe for any holiday dinner that you can make well ahead of time. These Brandy Orange Cranberries are delicious hot or cold. They’re also great on left turkey sandwiches. Whether your a jelly or a whole cranberry fan…I think you’ll enjoy these.
